在經過noma的洗禮過後,隔天一個人騎著腳踏車來到了位於哥本哈根北邊,
也是由noma體系出生的主廚Christian Puglisi的Relae。
相較於noma較為繁複的菜式組合過程,Relae卻執著於少數食材的體驗,每道所使用的不超過三種食材,
卻挑戰了每種食材較為特殊的處理手法,而常見的即為最近Nordic cuisine常見的醃漬與浸潤手法。
